Get What You’ll Need.

First things first, you’re going to need to get the ingredients. If you want to make baked shrimp empanadas, you’ll need one pound of uncooked large shrimp chopped, one large chopped onion, two garlic gloves, one diced plum tomato, one diced chipotle chile in adobo, one tablespoon of sauce from the pepper, a quarter of a cup of cilantro, two minced scallions, three-quarters of a tablespoon of kosher salt, and half a lime’s worth of juice.

Get the Shrimp Ready.

Now that you have everything for your empanadas, you’re going to want to get your shrimp ready. Peel and devein them, placing them into a colander to drain. However, you can also use frozen shrimp, too, which might be easier because all you have to do is remove the tails.

Get It Altogether.

Once your empanadas’ shrimps are ready, chop the rest of the ingredients up and combine them all together into a big bowl. Set that aside, and chop your shrimp up into smaller pieces. Then, add them to the onions, herbs, and everything. Mix it well, and you now have a delicious, baked shrimp filling for your empanadas.
