How to Make a Shrimp Empanada Filling

The best empanadas are the ones with the best filling. Shrimp empanada filling is a delicious, economic, and savory choice.  Shrimp is incredibly versatile and can work equally well for an everyday meal or for a special occasion. If you want to make some truly impressive, mouth-watering empanadas, then use the following recipe to make the most delicious, baked shrimp empanada filling you may ever have. 

Get What You’ll Need.

First things first, you’re going to need to get the ingredients. If you want to make baked shrimp empanadas, you’ll need one pound of uncooked large shrimp chopped, one large chopped onion, two garlic gloves, one diced plum tomato, one diced chipotle chile in adobo, one tablespoon of sauce from the pepper, a quarter of a cup of cilantro, two minced scallions, three-quarters of a tablespoon of kosher salt, and half a lime’s worth of juice. Using either frozen or fresh shrimp is fine.

Get the Shrimp Ready.

Now that you have everything for your empanadas, you’re going to want to get your shrimp ready. Peel and de-vein them, placing them into a colander to drain. Let the shrimp stay in the colander for at least ten minutes. You will want the shrimp to be relatively dry before creating the filling. However, you can also use frozen shrimp, too, which might be easier because all you have to do is remove the tails. 

Get It Altogether.

Once your empanadas’ shrimps are ready, chop the rest of the ingredients up and combine them all together into a big bowl. Set that aside, and chop your shrimp up into smaller pieces. Then, add them to the onions, herbs, and everything. Mix it well, and you now have a delicious, baked shrimp filling for your empanadas.

If you’ve only ever had chicken or beans in your empanadas, then it’s time for you to try something new. Make these baked shrimp empanadas, and your mouth will thank you for it. Baking The Shrimp Empanadas

After the filling is finished you can stuff them into frozen empanada shells or wraps found in the supermarket. These shells can be baked in the oven on a made in USA non stick pan or baking sheet. Spray these American baking pans or line them with parchment paper to keep the shells from sticking. Empanada shells can be fried in a deep fryers too. If you use frozen shells follow the instructions on the package carefully. Empanada wrappers are folded over the filling.

When you want to cook the filling before stuffing the empanada use a 10 inch cast iron skillet on the stove over medium heat. Add one or two tablespoons of olive oil and saute ingredients until shrimp turns pink for about three minutes. Remove ingredients and prepare the empanada for baking.  Another way to cook the filling in the skillet is saute the onion, garlic, plum tomato, chili, cilantro, and scallions first, cook for five minutes, and add chopped shrimp and other ingredients. Cook until the shrimp turns pink. Remove and stuff empanadas.

When you do not have baking sheets you can use stainless steel cake pans 9×13 sprayed or lined with parchment paper to bake empandas. There will be many Black Friday baking pans on sale with the holidays coming up. American baking pans made in the US are made by skilled craftsman.
