There is little that can compare to fresh salsa when trying to spice up a meal routine. It can be prepared in advance and stored for a week in the fridge, or up to two months in the freezer. Pico de Gallo
This classic Mexican salsa is simple, fresh, and full of flavor.

Two tomatoes, chopped
Two onions, diced
One fresh jalapeno, cleaned and diced
Five sprigs of cilantro, chopped
Lemon juice and seasoning to taste
Combine all of the ingredients in a bowl and let rest for a few minutes to for the flavors to develop.

Creamy Spinach and Artichoke Dip

Two cups plain Greek yogurt
One package fresh spinach
One can artichokes, chopped
Season with lemon juice, salt, and pepper
Lightly wilt spinach over medium heat (no more than five minutes). Combine all ingredients. This creamy salsa dip is a great complement to fresh vegetables. Dips made with Greek yogurt instead of the more common sour cream base contain less than half of the calories and one-fifth the fat. This dip can also be used as a simple, flavorful topping for baked chicken.
